Panini to Roll

With the end of summer, Brixham becomes a different own. Shorn of the large numbers of tourists and left to the die-hard visitor and the local, it retains its beauty and charm, reserving it for the true aficionado.

And so it is that the bread business winds down a bit as well. There are still the regular orders, but the volume decreases a little, and the nature of the product changes slightly.

Wheras in the summer, Panini and salad are the order of the day, in winter time its more soup and a roll.

now want a version to accompany soup, so I have had to modify the presentation. They have asked for a round Dinner Roll, still Organic and still Spelt, so this morning I set up the ferments, to give 24 hours of flavour to the finished product.

Tomorrow, I will do the usual orders of Spelt loaves and Soda Bread as well as these, for early delivery. Another 0530 start !!
